Title: Black Bean and Rice Salad

Yield: 6 Servings

2cCooked or canned black beans - (rinse & drained canned)
2cCooked rice
1 1/2cFresh cilantro
1/4cLime juice
3/4cOil
1/2cChopped onion
2 Garlic cloves; crushed
  Salt
  Freshly ground black pepper

Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Add salt and pepper to taste.
